pointed su chefs onion gravy baby!
So a few days ago i decided i hadn't had bangers and mash in a long while nor had i ever really made an onion gravy in a long old time. i also figured its something alot of people usually take the easy option and by the stuff u just add hot water to which just tastes like really bad ass! so here is my recipe for onion gravy baby!
so here it is nice and simple and fast so u can get it going on while everything else is getting cooked.
Ingredients:
2 big 'fat ass' onions thinly sliced
1 clove of garlic sliced and diced
2 tbsp olive oil
2 tbsp of expensive butter. (You cheap skates!)
2 tsp of sugar
2 tsp of balsamic
Dash of lemon juice
Glass of red wine or white (red is better) (25 ml)
Ppint of vedge stock or beef stock
4 tsp of flour(cornflour, but plain will do)
Seasoning (black pepper, salt)
4 tsp of cold water(tres important i cant stress this enough)
METHOD to this madness:
firstly, melt the oil and butter in a pan over a gentle heat once melted add the garlic and onion. cover with a lid or a plate for approx ten mins still on a gentle heat until the onions are clear and soft,
at the point you need to add your sugar lemon and balsamic re cover and cook for about 5 mins,
now uncover add the stock and wine and gently boil for 5 mins. while this is going on add your flour to a heat proof dish with some salt and pepper add the cold water and mix well together until you have a kind of paste consistency. after the 5 mins add a little bit of the gravy to the heatproof bowl and mix the paste and the gravy together completely. Now pour back into the pan and stir, turn the heat up high and boil until the gravy is thickened! that is it done done done! and it will taste brilliant i promise! nom! nom! perfect with Lincolnshire sausages and a nice cheesy creamy mash!

Today i have eaten:
Yoghurt, honey, mint, strawberry and banana mixed together for breakfast! was so so so good!
Beans on toast with Cumberland sausages and a nice cheese and onion omelette for lunch
Chicken in black bean with egg fried rice for tea. (one of my favourite and very quick things to cook prepe and cooking time less than half an hour! NOM!
I've had 7 brews today! ran out of sugar and tea bags though which isn't ideal! co op in the morning i think!
for the spelling and grammar police out there.. go have a seizure!
oh and talking of them how good is TOM VEKS new album leisure seizure! 5 pointed su stars! *****

RIOT! RIOT! RIOT!
Hello..
so Manchester was taken over for a few hours the other night by mindless morons and ruined my night with Raghu Dixit Project and if it hadn't been for the elderly gent trying to do Bhangra it would of been awful anyways ill tell you my story of Surviving the Riots Of Manchester 2011!
at around 18:15 i got on a tram to Manchester after checking the news to see if anything was going down nothing appeared to be so i thought it will be fine and off i went! as we pull into pic gardens i see a vast amound of police and youth is masks, bandanna's and balaclavas. The tram then pulled onto Market Street and as i got off the hole of market street was a wash with black balaclavas and other kids shouting and running around looking for some kind of action. We then decided we needed food so we set off down market street to see if anywhere was open and we got half way down and decided we would try Bella Italia which was closed so then set off back down market street to be swamped by youths and teenage girls screaming and laughing as they all gathered around Miss Selfridge we moved on quickly not that anyone seemed that interested in us but still the atmosphere was slightly tense and angry so i didn't fancy it! so moved on to the slug and lettuce which was pretty much the only place open. as we sat eating are curry we watched on the news the events unfolding on market street which had now turned massively ugly. Miss Selfridge now on fire and they were breaking into the Arndale NICE!
anyways the bar girl came up to us and asked us to drink up as they were closing as kings street had now become overrun by youths and idiots! its by now 20 past seven and the pub is in lockdown and going out looked pretty stupid but kinda had no choice as we needed to get out of the area! so we left and nearly got run down by a group of boys running down the street in their balaclavasss and bottles! so we make a quick exit past the Manchester Eye where we were greated by a about 10 riot police with very angry Police dogs and about 20 or so teenagers shouting and kicking at the dogs. The dogs rightly so were going mental and the kids kept at it. until the dog was let a little bit looser by the police man and he scampered away like a little girl! TWAT!
then a guy on a bike had a dog with him on no lead and the dog was going toward the police dogs until they all went mad and the dog ran off along side his owner who got an earful for not keeping his dog under control then we past with no issues thankfully im not one for angry dogs!
after that all we saw was kids running around with new shoes ect we got to the venue which looked all closed luckily we got in and everything was going ok until 8:45 when the gig got pulled due to the fact there was trouble outside the venue. so they pulled it and everyone was ushered out in dribs and drabs and put in taxis ect it took us an hour to get a taxi and when we finally did get outside the city smelt of burning and all we saw was kids as young as 8-9 running around laughing and bragging about things they had done, seen and stole! we got in a taxi and we saw riot van after riot van fire engine after fire engine. we got back to chorlton at around 20 past ten at night and it was the strangest and uneasy 4 hours of my life to date. I thought i would share it with you all.
Rioting is the most Pathetic thing I've ever seen and i stand by my hatred for chavs in balaclavas! especially the ones in a new Rolex as we know they didn't pay for it!!!
But i Survived the 2011 riots. Trouble does seem to follow me around though not IDEAL!!

Indeed it has been quite a month! Not many days in a row that didnt involve Alcohol!!
went to Latitude festival which was perfect went with lovely people who all had a lovely time. lots of drinking and dancing on tables. Lots of bands were seen, The National once again blew me away and even i shed a tear, was truly beautiful other highlights have to be Iron & Wine, Yann Tiersen, Caribou, Foals, Chapel Club, Dylan Moran, Johnny Flynn, Deerhunter, Suede, The Cribs, Kele and many more.. was outstanding! we found a disco tent which didnt really play lots of disco but it was named that anyway. if you ever go to latitude always meet at the chinese, when ever any of us got lost everyone gravitated towards the Chinese! its as good a place as any and made perfect sense at the time. Latitude always brought the play NAZI Germany to life(involved Nazi Germany as a tall ginger man, Nazi Germany's Grandma played by a young surfer boy in non drag using a walking stick made of twine, a married English couple arguing about the man going to war as little tommy played by a twig would miss his daddy) clearly a classic play. If you saw it i salute you, if you didnt i can only offer my greatest sympathies.
Bags of wineeee: well i do feel this should get a mention as it seems to of become julys tag name and rightly so! Im not sure quite how many boxes of wine were consumed but it was alot. anyway often heard being screamed out accross the fields of latitude was bag of wine much to the same tone as rag and bone! it made for a very interesting weekend at latitude!

Potato Cakes right lets get down to some food tips!
so right i had bangers and mash for tea was gorgeousssss but i had a fair amount of left over mash it was the 5 fat sausages i had i think that caused this 93% pork crazy!
so instead of putting the potato in the 'food wastage bin' i made cakes out of it and this is the most simple thing to do in the world and its such a good snack food!
so right you need plain flower and the left over mash and a pasty cutter though this isnt an essential tool.
place some flour on a flat clean surface
smooth out and place your unwanted mash on top now put more flour on the potato be generous!! TIGHT ARSE!
Now start to need your mash as if it was dough and add more flower until the mash is smooth and not sticky.
once this has occurred you can flatten out and cut circular piece of potato out as many as you can then with all the off cuts roll it into a ball and add more flour if required flatten out and repeat process till you have know potato left!
If you have any grease proof paper use this if not tin foil or something put them all together in a box wrapped individually so not to stick together and then freeze.
Cooking Instructions simple again 180 degrees fan oven, Bake until golden brown!
easy as 1-2-3
Fillings you can use anything i tend to have butter and cheese but beans and cheese is a good combo!

Basically me and a friend were sat on a bus from work and there were loads of annoying dick heads on the bus. so i just came up with a little phrase for this situation which was

Soya Sauce and garlic stir fry with 'PointedSuchef' Egg Fried rice.
Hello hello its been a while i have been busy writing my new album set to be released in early 2019 ill be doing some warm up shows before the album tour in late 2018. Then planning to headline Glastonbury 2019 just doing covers of other peoples stuff cause mine isn't good enough!
Stir Frying! its a simple concept.
wok, food, oil, heat wok then stir and FRY!
Ingredients
Beef stripssssss!
1 Onion (big) thinly chopped!
10 cupped mushrooms sliced!
Garlic (2 cloves) thinly diced
1 egg (whisked)
2 cups of Rice(per person)
Soy sauceeeee (kinda important)
take your beef and one clove of garlic and place in a bowl an hour or so before you want to cook. Cover the beef and garlic in a healthy serving of soy sauce and place in the fridge to marinade (the longer you leave the more flavour the beef will take on.
place ya wok on the hob and warm your oil get it nice and hot then add the onions and stir round and round until they start to go 'golden brown' then take your beef out the fridge and turn the wok down a lil bit and add in the beef. After a quick stir add the mushrooms and keep stiringgg. turn down further and leave to simmer for about 5-10 mins until the mushrooms are all soft and lovely!
next is the fried rice heat a second wok and add oil until really hot then add the whisked egg and leave to cook then break it up into strips doesn't need to be accurate then add the 'drained' rice and stir constantly adding a lil more oil then once all is kinda shining like a light glisten. Then add a few drops of soy sauce and stir till the rice is a nice shade of brown and take off the heat and serve. then top with the stir fry! and we have food this process shouldnt take longer than 20 mins if it does try again better!

'Lard Pussy' what is it should it be in a dictionary...
This isn't anything to do with lard or indeed pussy. In fact it has very little to do with anything but it is a great answer for anything you want. I've heard a few meanings for it one of them being 'a sinking submarine' another that its a phrase for the act of sighing so you would say 'ahhh lard pussy' if your budgie dies or you scratch your car ect....ect...
the moral of this story is there is no moral to this !

Susan's Mac and Cheese!
This is a really simple dish that doesn't take long if you have a good oven.
other things you can add to this are
You require....
Macaroni
A block of cheese (cheddar or another similar hard cheese)
Mustard powder
Salt + Pepper ahhhhhh push it or in this case grind it!
Garlic
and 1/4 of a pint of milk or enough to cover base of oven dish!
and then i add other herbs to like Basil and i like to use Herbs de Provence! non of these are essential
Breadcrumbs enough for a generous covering of the top of the oven dish.
Method is as simple as me and you!
Add milk, mustard powder, salt+pepper (ahhh grind it) and garlic (other herbs if wanted)
Then add a layer of grated cheese as little or as much as you want.
Boil ya macaronis until soft then add a layer of macs to the dish and cover with cheese add more salt pepper and mustard powder and repeat process until you have half a cm gap at the top of your dish then add a final layer of cheese.
Now add your breadcrumbs in an even covering and grate some parmesan on if you have it in(not essential)
all you need to do then is oven bake at around 180 degrees C until the cheese is all melted and the breadcrumbs have browned on top!
it will be sooo good i promise you im off to have this now for my luncheon!
Serve with Ketchup, Brown sauce or Henderson's!
other things you can add to this are
Ham or some kind of bacon
Sausage
Broccoli
or anything you want really!
this process shouldn't take more than 45 mins from start to finish!

Just Dylan man!
I was watching a Documentary on Bob Dylan the other day and it got me thinking he is adored by so many, idealised by so many and is he all that good really? like yeah he is very good but he isn't all that. Anyways it just reminded me of being in college (when i was actually there I know it wasn't all that often but i went sometimes!god mum!) i walked in to the common room and someone had headphones in and i asked him what he was listening to he took one headphone out and just looked at me and said "just Dylan...Man" and then put the headphone back in, He probably wasnt even listening to Dylan was probably the killers or something. but its cool to be into Dylan isnt it and for that reason im out!
spit! spat! splosh!
so today I embarked on a journey between Oxford road and Chorlton not a new journey to me by any stretch.
Anyway I got on the bus and there were limit seats at the front so i went to the dreaded back of the bus, where there were loads of seats available and one woman sat draped over 3 as she was lying down. A very odd few moments followed. I looked down at my phone instantly as i sat as i could feel her staring at me and hating me! :( All of a sudden i heard her tut and in that moment i was covered in about 7 or 8 droplets of spit on my hair face and coat i looked up as to see what she was doing and she looked all mean and gross and I decided i wouldn't say anything as not to cause a scene and dry my self off. luckily about 3 stops later she moved away. But to be spat on by a grown women I mean really am i that disgusting? or is it just her?

I looked down at my phone instantly as i sat as i could feel her staring at me and hating me! :( All of a sudden i heard her tut and in that moment i was covered in about 7 or 8 droplets of spit on my hair face and coat i looked up as to see what she was doing and she looked all mean and gross and I decided i wouldn't say anything as not to cause a scene and dry my self off. luckily about 3 stops later she moved away. But to be spat on by a grown women I mean really am i that disgusting? or is it just her?

I am back to start a fresh.
so why not start with something FRESH!
a nice simple Rocket(roquette) Salad
you will need:
to serve 2
Rocket a big bag!
4 Limes
Balsamic Vinegar
1 chilli (red) (if you can handle it. I try to cant always)
1 sweet red pepper
1 bunch of spring onions
1 small bag of coriander
small amount of feta
2 garlic cloves
and a squeeze of honey
small handful of mustard seeds
olive oil plenty of!
For the dressing you need to:
into a cup or dish place
thinly chopped Chilli add olive oil and balsamic plenty of!
then add some of the chopped coriander and squeeze 3 of the limes into the cup and give a stir then add the squeeze of honey and mustard seeds and stir again as if u were whisking an egg :) and then place in the fridge while you prepare the rest of the salad.
For the salad chop the pepper into very thin strips and place in a bowl with the rocket and mix around using your hands then add spring onions nice and thinly chopped followed by a very good helping of coriander mix well and add olive oil then before serving add chunks of feta and drizzle in the dressing and you have a perfect fresh salad!
so any ways the idea of this salad came from one my house mate made me a few weeks ago so thank you wondergupta!
