Stuffed Pepper with a tomato and mascarpone sauce DELIGHT

HELLLLLLOOOOO

So i was on my way home from work and decided i really fancied something using the peppers i had neglected since buying a few days before and i started to think i should stuff them with other things i had neglected instead of making another pasta dish so i thought id stuff the little F*&*ers. (they were quite big in actual fact for peppers!
 So i stopped off at the local Vineyard and got me self a nice bottle of red and headed home to MAKE HISTORY

So you need the following
THE STUFFING!
4 inches of MEAT (chorizo in my case) tiny tiny cubes please guys!
1 small onion (slashed)
5 medium sized SHROOMMMMSS! Axed up
A small cup of BASMATI!
A table spoon of Red Pesto
1 clove of Garlic (sliced diced and made really tiny (like a tiny dancer in a small shoe)
2 big peppers to serve two, Cut into halves with all seeds removed and membrane gone) or 3 halves to fill a fatty!
1 table spoon of Mascarpone
fresh parmesan shavingssss

THE SAUCE
Chopped tomatoes
A table spoon of Balsamic
1/2 a tub of Mascarpone (125 grams)
Some pepper

MATHOD (method)

Put your halved peppers into boiling water for around 5 mins to soften then remove and place onto a baking tray for later
pour away some of your water and add your rice and a pinch of salt you need the water to just be above the level of the rice, Bring the rice to the boil and then turn the heat right down and cover.
Meanwhile u need to get a frying pan wok whatever!
and put some olive oiul in and heat then add onions until they soften and then add your shrooms and chorizo and stirrrrrr like alot yeah! then lower the heat and leave simmering while your rice softens should take around 7-8 mins give or take

all the water should of been soaked up into your rice and now all you need to do is add to your vedge and chorizo and stir in. Then add your pesto and mascarpone, mix well and then stuff your peppers and cover in parmesan and place in the oven on 180 degrees untill the parmesan has melted,


While this is taking place you need to make it all abit saucy so stick on some BARRY WHITE and add your chopped tomatoes to the heat and stir in the mascarpone, Balsamic and black pepper then leave to warm do not boil please thanks a million! 


Once the peppers are ready you can serve them on a plate covered in the sauce or you can have it on the side i cover them and add rocket if you fancy it :)


THIS IS BY FAR THE BEST THING IVE COOKED IN A WHILE!
